Where It All Began
Bombay Taco Company was born in August 2020, at a time when opening a restaurant felt slightly unreasonable. But good food has always thrived on bold decisions — and BTC began as one.
The idea was simple: Mexican food with an Indian twist, served fast, fresh, and without fuss. Global flavours, Bombay energy, and tacos that felt familiar yet exciting.
The First Chapter
The early days of Bombay Taco Company were full of momentum. The food connected, the concept stood out, and the brand quickly found a loyal following.
BTC was designed to be approachable — a place where great flavours didn’t need explanations and comfort food didn’t feel boring.
As time went on, the original founders found themselves growing other restaurant brands across Mumbai and Goa. Their focus naturally shifted, even as BTC continued to run.
Without hands-on attention, the brand slowly lost its edge. By 2023, it became clear that Bombay Taco Company needed renewed direction — or a completely new chapter.
A Family Steps In
That turning point arrived in June 2024, when Vridhi and Satish Dodani decided to step in and take over Bombay Taco Company.
Their approach was simple: pause, reassess, and rebuild with intent. This wasn’t about rushing growth — it was about restoring clarity and confidence.
Menus were tightened, operations were streamlined, and consistency became the foundation of every decision.
Slowly but surely, the brand found its rhythm again — stronger, sharper, and more focused than before.
The Way Forward
Today, Bombay Taco Company is a female-led, family-run brand, growing with purpose and patience. A second outlet followed, with more locations planned.
What hasn’t changed is the heart of it all — bold flavours, honest food, and tacos that don’t try too hard. Just good food, done right, one taco at a time.

Chef Manvi Dodani’s journey is rooted in curiosity, discipline, and a desire to understand food beyond the plate.
She holds a Degree in International Culinary Arts from ITM Mumbai, along with diplomas in Culinary Arts and Patisserie from ICCA Abu Dhabi, and a specialisation in Hospitality Principles from City & Guilds, London — giving her a strong global foundation with practical depth.
Her professional experience took her to Abu Dhabi, where she worked in royal kitchens under MasterChef Richard, gaining exposure to precision-driven, large-scale operations. She also collaborated on a special project with Chef Marco Pierre White, learning the importance of restraint, consistency, and leadership in world-class kitchens.
In 2025, Manvi won Silver in the Healthy Desserts category at the Cakeology Contest, recognising her thoughtful approach to flavour and balance. Today, she leads Bombay Taco Company, shaping its food, systems, and growth with a clear vision — building a modern taco brand that blends global technique with Bombay soul.
